Kentaro MITSUURA

The 8th-generation head of Mitsuura Brewing, a 160-year-old company in Hofu City, Yamaguchi. A graduate of the Department of Fermentation Science at Tokyo University of Agriculture. While rooted in traditional fermentation such as miso, he develops innovative products that enrich the dining table, including tea with dried lemon and eco-friendly sheet straws. In 2025, he launched the new brand “Hackoh” to propose a free and modern style of fermentation.
